This simple recipe is incredibly easy to whip up, bake and enjoy within an hour! I will say, I think I like these “blondies” almost better than chocolate chip cookies. Rich with vanilla flavor and the butter and brown sugar combine for a rich butterscotch like flavor.

The texture is a blend of chewy edges and gooey center. Almost like cookie dough. It is truly impossible to eat only one. This recipe is easily halved, if you have no faith in your will power!

Secrets for Perfect Brownies

The secret to the best blonde brownies is pretty simple. Be sure to whip the butter, brown sugar, vanilla, and eggs for at least one to two minutes. The mixture will be light and fluffy.

Use your mixer to whip the butter, brown sugar, and eggs to save your arm muscles. Once this is whipped, remove the bowl from the mixer and then add the flour and salt in by hand. Fold the ingredients in until just combined. I use a wooden spoon to mix in the flour and then the chocolate chips. Over mixing brownie batter will result in too much air getting into the batter. This will result in more cake like brownies, not the thick and gooey texture that makes brownies so good!

Most importantly, do NOT overcook! The soft, chewy, and gooey-ness of these Blonde Brownies makes them great. Bake for 30 minutes, no more! A toothpick inserted into the center should not come out wet with batter, but it will not be clean either. Moist crumbs remaining is what you are looking for.

Preparing your baking dish is also important. Grease and flour well. I also place a piece of parchment paper in the pan prior to pouring in the batter. This will allow the blondies to lift out easily making for easier cutting.

Nice, even square blondies always look pretty! Invest in a slicer knife that is slightly larger than the length of you baking pan. This tool will help make nice, even, straight cuts.

Ingredients

  • 1 Cup Butter Melted
  • 2 Cups Brown Sugar Light, firmly packed
  • 2 Eggs
  • 2 TSP Vanilla Extract
  • 2 Cups Flour
  • 1 TSP Salt
  • 2 Cups Chocolate Chips

Instructions

  • Prepare a 9×13 inch baking pan with baking spray. Preheat oven to 350°F.
  • Melt butter and combine in a stand mixer with brown sugar. Mix until smooth and dissolved. Beat one minute.
  • Add in eggs and vanilla extract. Beat until light and fluffy.
  • Remove from stand mixer and add in flour & salt, mixing by hand until blended.
  • Fold in chocolate chips.
  • Spread into prepared baking dish and bake at 350°F for 30 minutes or until a toothpick inserted into the center comes out barely clean. Do not over-bake. Allow to cool completely.
  • Slice into desired size and enjoy!
