The Perfect Cookie

A perfect chocolate chip cookie is measured in the following qualities. First, plumpness. A thin cookie is never satisfying. You do not want your cookies to spread too much and be flat. This makes them too crisp, melts the chocolate chips too much and overall, is just not as pretty. To avoid this, do not use melted butter and carefully measure the flour to ensure a nice plump cookie. Both of these steps are necessary for thick, plump cookies.

Second, a perfect cookie is crisp on the edges and chewy in the middle. This recipe uses brown sugar which contains molasses and raises the moisture content while baking, resulting in a chewier cookie with nice crisp edges. More moisture and the proper temperature of ingredients when mixing can help create the perfect texture. Additionally, if you wish in this recipe, omit the egg white and add a second egg yolk for even chewier cookies.

The almond extract really brings out the cherry flavor in these cookies. If you prefer, chop up the cherries into smaller pieces but I prefer leaving them whole.

Cherry Chocolate Chip Cookies

Ingredients

  • 1 Cup Butter Room Temperature
  • 1 Cup Light Brown Sugar Packed
  • ½ Cup Granulated Sugar
  • 1 Egg
  • ½ TSP Vanilla Extract
  • 1 TSP Almond Extract
  • Cup All-Purpose Flour
  • 1 TSP Baking Soda
  • ½ TSP Salt
  • 10 Ounces Dark Chocolate Chips
  • 6 Ounces Dried Cherries

Instructions

  • Preheat oven to 375°F.
  • In a stand mixer, cream butter and sugars together until light and creamy.
  • While this mixes, in a separate bowl, combine flour, salt and baking soda and set aside.
  • Add egg, almond and vanilla extract to the butter and sugar mixture and mix until just combined.
  • Add the flour mixture in and stir until well incorporated. Do not overmix.
  • Using a wooden spoon, mix in the chocolate chips and dried cherries until distributed throughout the cookie dough.
  • Using a medium cookie scoop, drop dough onto an ungreased cookie sheet about 2 inches apart.
  • Bake 9-11 minutes or until edges are light brown. Allow to cool for 2 minutes on the baking sheet prior to transferring to a cooling rack to cool completely.
  • Store in an airtight container for 5 days.

Eat well. Live fully. Bake cookies.
