- ¾ Cup Unsalted Butter
- 1 Cup Sugar
- 1 Egg
- 1 Egg Yolk
- 1 TSP Vanilla Extract
- ½ TSP Almond Extract
- 1 TSP Baking Soda
- 1 TSP Kosher Salt
- 1 3.5 oz. Packet Instant Vanilla Pudding Mix
- 2 Cups All-Purpose Flour
- ½ Cup Sprinkles
- ½ Cup White Chocolate Chips
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking sheets. Set aside.
In a stand mixer, beat the butter and sugar on medium speed for about 2 minutes until well combined and fluffy.
Add in the egg and egg yolk, vanilla and almond extract, baking soda, and salt. Mix until combined, scraping the bowl to ensure proper combination of the ingredients.
Add the pudding mix and mix until combined, for about 30 seconds.
Gradually add in the flour, mix on low until just combined.
Remove bowl from stand mixer and using a wooden spoon, mix in the sprinkles and white chocolate chips. Mix until incorporated.
Using a medium cookie scoop, drop dough onto the prepared baking sheet, about 2 inches apart.
Bake about 7-8 minutes, until the cookies are almost set. To ensure a super soft cookie, do not overbake!
Allow cookies to cool for 2-3 minutes on the baking sheet prior to moving to a wire rack to cool completely.
