Ingredients

  • ¾ Cup Unsalted Butter
  • 1 Cup Sugar
  • 1 Egg
  • 1 Egg Yolk
  • 1 TSP Vanilla Extract
  • ½ TSP Almond Extract
  • 1 TSP Baking Soda
  • 1 TSP Kosher Salt
  • 1 3.5 oz. Packet Instant Vanilla Pudding Mix
  • 2 Cups All-Purpose Flour
  • ½ Cup Sprinkles
  • ½ Cup White Chocolate Chips

Instructions

  • Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking sheets. Set aside.
  • In a stand mixer, beat the butter and sugar on medium speed for about 2 minutes until well combined and fluffy.
  • Add in the egg and egg yolk, vanilla and almond extract, baking soda, and salt. Mix until combined, scraping the bowl to ensure proper combination of the ingredients.
  • Add the pudding mix and mix until combined, for about 30 seconds.
  • Gradually add in the flour, mix on low until just combined.
  • Remove bowl from stand mixer and using a wooden spoon, mix in the sprinkles and white chocolate chips. Mix until incorporated.
  • Using a medium cookie scoop, drop dough onto the prepared baking sheet, about 2 inches apart.
  • Bake about 7-8 minutes, until the cookies are almost set. To ensure a super soft cookie, do not overbake!
  • Allow cookies to cool for 2-3 minutes on the baking sheet prior to moving to a wire rack to cool completely.
