Apple Oatmeal Cookies

Apple Oatmeal Cookies are a spin on a classic cookie recipe.  Apples, cinnamon, & nutmeg come together in a thick, chunky oatmeal cookie. Drizzled with a maple cinnamon glaze for a new favorite fall recipe!

Ingredients

Cookie Dough

  • 2 Cups Old Fashioned Whole Rolled Oats
  • Cup All-Purpose Flour
  • ½ TSP Baking Soda
  • ½ TSP Salt
  • TSP Cinnamon
  • ½ TSP Nutmeg
  • ½ Cup Butter Melted
  • ¼ Cup Unsweetened Applesauce
  • 1 Cup Light Brown Sugar
  • ¼ Cup Granulated Sugar
  • ¼ Cup Honey
  • 1 Egg
  • 1 TSP Vanilla
  • Cup Finely Diced Apple

Maple Cinnamon Glaze

  • 1 Cup Confectioner Sugar
  • 1 TBSP Milk
  • 2 TBSP Maple Syrup 100% Pure, Natural
  • ½ TSP Cinnamon

Instructions

Cookies

  • In a large bowl, combine the oats, flour, baking soda, salt, cinnamon, and nutmeg. Whisk together and set aside.
  • In a stand mixer, mix together the applesauce, butter, honey, brown and granulated sugars until combined. Add the egg and vanilla and mix until combined.
  • Add the dry ingredients into the wet and mix until just combined. Using a wooden spoon, fold in apples. Allow to chill for 30 minutes.
  • Preheat oven to 350°F and line two baking sheets with parchment paper or silicone baking mats.
  • Using a medium cookie scoop, scoop cookie dough and place about 3 inches apart on the prepared cookie sheets
  • Bake for 13-15 minutes until edges are lightly browned. Allow to cool for 2 minutes on the baking sheet before moving to a wire rack to cool completely.

Maple Cinnamon Glaze

  • Combine confectioner's sugar, cinnamon, milk and maple syrup into a bowl and mix until combined.
  • Pour glaze into a ziploc bag, snip a small corner off and drizzle over cooled cookies. Allow to set and serve.
