Cookie Dough
- 2 Cups Old Fashioned Whole Rolled Oats
- 1¾ Cup All-Purpose Flour
- ½ TSP Baking Soda
- ½ TSP Salt
- 1½ TSP Cinnamon
- ½ TSP Nutmeg
- ½ Cup Butter Melted
- ¼ Cup Unsweetened Applesauce
- 1 Cup Light Brown Sugar
- ¼ Cup Granulated Sugar
- ¼ Cup Honey
- 1 Egg
- 1 TSP Vanilla
- ⅔ Cup Finely Diced Apple
Maple Cinnamon Glaze
- 1 Cup Confectioner Sugar
- 1 TBSP Milk
- 2 TBSP Maple Syrup 100% Pure, Natural
- ½ TSP Cinnamon
Cookies
In a large bowl, combine the oats, flour, baking soda, salt, cinnamon, and nutmeg. Whisk together and set aside.
In a stand mixer, mix together the applesauce, butter, honey, brown and granulated sugars until combined. Add the egg and vanilla and mix until combined.
Add the dry ingredients into the wet and mix until just combined. Using a wooden spoon, fold in apples. Allow to chill for 30 minutes.
Preheat oven to 350°F and line two baking sheets with parchment paper or silicone baking mats.
Using a medium cookie scoop, scoop cookie dough and place about 3 inches apart on the prepared cookie sheets
Bake for 13-15 minutes until edges are lightly browned. Allow to cool for 2 minutes on the baking sheet before moving to a wire rack to cool completely.
Maple Cinnamon Glaze
Combine confectioner's sugar, cinnamon, milk and maple syrup into a bowl and mix until combined.
Pour glaze into a ziploc bag, snip a small corner off and drizzle over cooled cookies. Allow to set and serve.
