Instructions
Preheat oven to 375°F. Line a muffin tin with liners and set aside.
In a large bowl, combine flour, salt, baking soda and cinnamon. Whisk together and set aside.
In another bowl, mix together melted butter and brown sugar. Add in apple sauce, vanilla and egg. Mix until combined.
Add the smashed bananas and mix until well incorporated.
Pour wet ingredients into the dry and mix until just combined.
Add in the diced apples and incorporate well.
Using a ¼ cup measuring cup, fill muffin liners about ¾ full.
Bake 20-25 minutes until a toothpick inserted into the center comes out cleanly.
Store in an airtight container on the counter for up to 5 days.
