Ingredients

  • 1 Cup Butter
  • 2 Cups Sugar
  • 1 Cup Brown Sugar
  • 3 Eggs
  • 15oz Can of Pureed Pumpkin
  • 2 TSP Vanilla
  • 3 Cups Flour
  • TSP Salt
  • 1 TSP Baking Powder
  • 1 TBSP Baking Soda
  • 1 TSP Cinnamon
  • ½ TSP Nutmeg
  • 1 TSP Cloves

Instructions

  • Preheat oven to 350°F. Prepare 2 baking loaf pans with non-stick spray.
    Alternate: Prepare one loaf pan and one 12 muffin tin with muffin liners.
  • In a large bowl, combine flour, baking soda, baking powder, and salt. Mix together and set aside.
  • On a stand-mixer, cream together butter, brown and granulated sugars until light and fluffy.
  • Add eggs one at a time and mix until just blended.
  • Add pumpkin and vanilla and mix until incorporated. Scrape down sides of bowl throughout mixing.
  • Add in cinnamon, nutmeg, and cloves. Continue to mix.
  • Add in the flour mixture a ½ cup at a time and mix until just blended.
  • Pour batter into prepared baking pans or muffin tin.
  • Bake at 350°F for about 55-60 minutes until a toothpick inserted in the center comes out mostly clean.
    Alternate: Bake muffins for about 20-25 minutes.
  • Allow to cool. Store in an airtight container for 5-7 days.
