Servings: 16 Crepes
- 4 Eggs
- 2½ Cups Whole Milk
- ¾ Cup Dutched Cocoa Powder I like Hershey's Special Dark
- 2 Cups Flour
- ⅛ TSP Salt
- 1 TSP Vanilla Extract
- ½ Cup Confectioners Sugar
- 5 TBSP Butter Melted
Add all ingredients as ordered into a blender and blend until smooth and well mixed. Scrape sides and mix again briefly. Alternatively, add ingredients into a large pitcher and blend with an immersion blender.
Cook crepes with Crepe Pan: Using a nonstick 10 inch crepe pan heated over medium high heat, melt a small amount of butter in the pan. Pour about ¼ to ⅓ cup of crepe batter into the center of the pan.
Using a crepe spreader, swirl the batter into a thin, even layer on the pan. Alternatively, swirl the pan as pouring the batter into the pan to spread evenly.
Cook until the top no longer appears shiny, about 30 seconds. Flip and allow to cook another 15 seconds. Remove from pan and transfer to a platter.
Cook Crepes with Electronic Iron: Pour ⅓ chocolate crepe batter onto center of crepe iron. Carefully roll iron to spread batter evenly on surface of iron.
Allow to cook until surface is no longer shiny. Using tongs, flip crepe and allow to cook another 30 seconds.
Transfer to platter and continue until all of batter is used.
Spread on your favorite fillings and enjoy!
