- 2 Cups All-Purpose Flour
- 1 Cup Unsalted Butter Softened
- ⅓ Cup Heavy Cream
- 1 Cup Sugar
Creamy Filling
- ½ Cup Butter Room Temperature
- 1½ Cup Powdered Sugar
- 2 TSP Vanilla Extract
- Food Coloring
Make dough by combining flour, butter, and heavy cream.
Cover dough and refrigerate for one hour or longer.
Preheat oven to 375°
On a floured surface, roll out dough to ⅛ inch thick. Cut 1 ½ inch round cookies (Use a shot glass if you do not have a round cookie cutter).
Transfer cookies to a plate with granulated sugar, ensure both sides of the cookie are coated with sugar.
Transfer coated cookies to an ungreased cookie sheet. Prick cookies with a fork about 4 times.
Bake cookies from 7 to 9 minutes, until just set. Be cautious not to allow the cookies to brown.
Allow to cool completely.
Creamy Filling
Beat powdered sugar, butter, and vanilla extract until smooth and fluffy.
Tint with food coloring to desired color.
Make cookie sandwiches by filling with about 1 tsp of creamy filling.
