I love these cookies and remember them fondly from my childhood. They are dangerously addictive and you will need to give some away to avoid eating them all!

Sweet Filling and Flaky Wafer Cookies!

I am a shortbread cookie lover. I really appreciate the combination of sweet and salty. These cookies are not too sweet, which allows for the sweetness of the creamy filling to explode in your mouth!

They are delicate and elegant looking cookies and versatile to many holidays and occasions. Light pastels for Spring and Easter, reds and pinks for Valentine’s Day, or green and red for Christmas.

This recipe is simple to make and hard to make mistakes with. Encrusting the cookies with sugar and making the sandwiches are the most time consuming part. The final product is worth it!

Be cautious not to make the wafer cookies too thick, rolling them out to 1/8 inch thick. I like the cookies to be no larger than 1 and 1/2 inch rounds. If you do not have a cookie cutter that is 1 1/2 inch thick like this one, you can easily use a standard size shot glass.

Ingredients

  • 2 Cups All-Purpose Flour
  • 1 Cup Unsalted Butter Softened
  • Cup Heavy Cream
  • 1 Cup Sugar

Creamy Filling

  • ½ Cup Butter Room Temperature
  • Cup Powdered Sugar
  • 2 TSP Vanilla Extract
  • Food Coloring

Instructions

  • Make dough by combining flour, butter, and heavy cream.
  • Cover dough and refrigerate for one hour or longer.
  • Preheat oven to 375°
  • On a floured surface, roll out dough to ⅛ inch thick. Cut 1 ½ inch round cookies (Use a shot glass if you do not have a round cookie cutter).
  • Transfer cookies to a plate with granulated sugar, ensure both sides of the cookie are coated with sugar.
  • Transfer coated cookies to an ungreased cookie sheet. Prick cookies with a fork about 4 times.
  • Bake cookies from 7 to 9 minutes, until just set. Be cautious not to allow the cookies to brown.
  • Allow to cool completely.

Creamy Filling

  • Beat powdered sugar, butter, and vanilla extract until smooth and fluffy.
  • Tint with food coloring to desired color.
  • Make cookie sandwiches by filling with about 1 tsp of creamy filling.

The wafer cookies are easy to make, however offer an a rich, creamy treat between 2 flaky wafer cookies! They are sure to impress when you bring them to festivities and parties.
