Tips for Delicious Banana Bread

Browned, over-ripe bananas are essential for the best banana bread! Bananas that are not ripe enough do not smash up well enough, creating lumps of banana in your bread. The sweetness in over-ripe bananas lends to a better tasting bread. Look for browned, smushy bananas for the best bread.

I use 2 to 3 bananas in this recipe, dependant on the size. Aim to have about a cup of smashed bananas for the best banana-y flavor!

When mixing your flour into your batter, be cautious not to overmix. This will create a dry loaf of bread.

I like to use creamy peanut butter for this recipe, solely because my children will not eat bread with nuts. However, using a crunchy peanut butter will work out fine, adding a little texture to your banana bread.

Ingredients

  • ½ Cup Butter Softened
  • ½ Cup Sugar
  • ½ Cup Brown Sugar
  • 2 Eggs
  • 3 Bananas
  • ¾ Cup Peanut Butter
  • ½ TSP Vanilla Extract
  • 1 TSP Baking Soda
  • Cups All -Purpose Flour

Instructions

  • Preheat oven to 325°F. Lightly grease a 5×9 inch loaf pan.
  • In a large bowl, mix together flour and baking soda. Set aside.
  • Smash the bananas and set aside.
  • In a stand mixer, cream together the butter, sugar, and brown sugar.
  • Add eggs and beat well.
  • Add peanut butter, bananas and vanilla extract and mix until well combined.
  • Add in flour mixture a small amount at a time, mixing until just combined.
  • Pour batter (it will be thick!) into the loaf pan. Bake at 325° for an hour and 10 minutes.

I like to check my bread at about an hour to test for doneness. I insert a toothpick and if it comes out cleanly, then it is finished! The peanut butter in this recipe does make this bread inherently more dense and a little of a moist texture. Not cooking fully will result in a gooey center!

Peanut butter offers a unique flavor and is my ultimate favorite ingredient to work into baked goods! The nutty flavor really comes forward and makes this bread extra dense and moist.
