Preheat oven to 350°F. Prepare 2 baking sheets with silicone baking mats or parchment paper and set aside.
In a bowl, whisk together the oats, flour, baking soda, salt, and cinnamon. Set aside.
In a stand mixer, beat together butter, tahini, sugar, and brown sugar until creamed together well, about 2 minutes.
Mix in the egg, vanilla extract, and honey. Mix until well combined.
On low speed, mix in the dry ingredients until just combined.
Using a medium cookie scoop, place cookie dough balls 2 inches apart.
Bake in oven for 8-9 minutes, until edges are lightly browned, but still soft in the center.
Remove cookies from oven, and allow to rest on the baking sheet for about 5 minutes before removing to a cooking rack to cool completely.
