Honey Tahini Oatmeal Cookies are a delicious twist on traditional oatmeal cookies. The perfect balance of sweet, nutty, & chewy all wrapped up into a cookie. This cookie can be altered in so many ways, to offer a delicious variety of yummy cookies. Add some chopped dates, raisins, or chocolate chips to make this cookie satisfy any craving!

Tahini is a mild nut butter that really pairs well with the honey and oatmeal in this cookie. Made from ground sesame seeds, the flavor is milder than many other nut butters. But if you are feeling less adventurous, or your pantry does not permit using tahini…it is easy to switch this to ingredient to peanut or almond butter. No adjustments needed in measurements.

My kids don’t love fruit in cookies…so I omitted any raisins or other fruit and to be honest, I love them without anything added! These cookies are so chewy and sweet, they don’t really need anything. Perfectly paired with a glass of ice cold milk or hot chai tea!

I also think these would be amazing with a cream cheese frosting sandwiched between two of these yummy cookies for a homemade oatmeal pie!

Additionally, it is easier to prepare other ingredients as the butter and sugars whip together! Splurge…get one! It will change your baking life.

These honey tahini oatmeal cookies are incredibly easy to whip up and super kid friendly! My kids love them and they don’t notice the oatmeal!

For best success, use room temperature butter and eggs. It helps the ingredients incorporate into each other better.

I use old-fashioned oats, not quick oats. These produce a much better texture for the cookie.

Ingredients

  • Cups Old Fashioned Oats
  • ¾ Cups All-Purpose Flour
  • ½ TSP Baking Soda
  • ¼ TSP Salt
  • ½ TSP Cinnamon
  • ½ Cup Butter Room Temperature
  • ½ Cup Sugar
  • ½ Cup Brown Sugar
  • ½ Cup Tahini
  • 1 Egg
  • 1 TSP Vanilla Extract
  • 2 TBSP Honey

Instructions

  • Preheat oven to 350°F. Prepare 2 baking sheets with silicone baking mats or parchment paper and set aside.
  • In a bowl, whisk together the oats, flour, baking soda, salt, and cinnamon. Set aside.
  • In a stand mixer, beat together butter, tahini, sugar, and brown sugar until creamed together well, about 2 minutes.
  • Mix in the egg, vanilla extract, and honey. Mix until well combined.
  • On low speed, mix in the dry ingredients until just combined.
  • Using a medium cookie scoop, place cookie dough balls 2 inches apart.
  • Bake in oven for 8-9 minutes, until edges are lightly browned, but still soft in the center.
  • Remove cookies from oven, and allow to rest on the baking sheet for about 5 minutes before removing to a cooking rack to cool completely.
