Cinnamon Honey Scones

Ingredients

  • 2 Cups Flour
  • 1/2 TSP Baking Soda
  • 2 TSP Baking Powder
  • 1/2 TSP Salt
  • 1 TSP Cinnamon
  • 1/2 Cup Butter Cold
  • 4 TBSP Honey
  • 1 Egg Separated
  • 1/3 Cup Buttermilk

Cinnamon Sugar Topping

  • 1/4 Cup Brown Sugar
  • 1 TBSP Cinnamon
  • 2 TBSP Butter

Cinnamon Glaze

  • 1 Cup Powdered Sugar
  • 2-3 TBSP Milk
  • 1/2 TSP Vanilla Extract
  • 1/4 TSP Cinnamon

Instructions

  • Prepare a baking sheet with parchment paper.
  • Combine flour, baking soda, baking powder, cinnamon, and salt. Stir until well mixed.
  • Cut in butter. Mixture should be crumbly.
  • Separate egg. Set aside egg white to use later.
  • In a separate bowl, combine egg yolk, buttermilk, and honey. Mix together.
  • Add milk and honey mixture to the dry ingredients. Mix until just combined.
  • Dough will be a crumbly consistency. Form dough into a round ball.
  • Place dough on prepared baking sheet and pat dough ball down to be about 1/2 an inch in thickness.
  • Cut the dough into 8 equal sections.
  • In a separate bowl, melt remaining 2 tablespoons of butter. Add the brown sugar and 1 tablespoon cinnamon. Mix.
  • Whisk the egg white until frothy and brush the top of the dough.
  • Top with the cinnamon and sugar mixture.
  • Preheat oven to 400 degrees. While oven is heating, place scones in the fridge uncovered to chill for 15 minutes.
  • Bake at 400 degrees for 15 to 18 minutes.
  • While baking, mix together milk, powdered sugar, vanilla, and 1/4 tsp cinnamon to form a glaze.
  • Once scones have finished baking, allow to cool for 10 minutes. Drizzle with glaze.
