Preheat the oven 400°F. Line a baking sheet with foil.
Slice zucchini into ¼ inch thick rounds. Typically one large to 2 medium sized zucchinis.
In a ziploc bag, toss sliced zucchini with olive oil and 2 teaspoons of garlic powder until coated.
On the baking sheet place zucchini in rows with edges close together but not touching.
Season tops of zucchini with freshly ground sea salt & pepper. Sprinkle an additional 1 to 2 tsp of garlic powder on top to preferred taste.
Top each zucchini slice with a generous amount of shredded parmesan.
Roast in oven for 10 minutes.
Then broil for about 2 minutes to crisp the parmesan, watching closely so it does not brown too much.
Serve and enjoy immediately.
