Roasted Parmesan Crusted Zucchini

Simple ingredients makes this a go to recipe for all that zucchini that a few plants produce! You will want to make this again and again. Even kids love it with the crunchy, cheesy topping!

Toss the zucchini in a bag with olive oil and garlic powder to ensure all of the slices are well coated. Next, lay the zucchini slices out on the prepared baking sheet, close together but avoid touching. This will allow the zucchini to roast evenly and not be too mushy.

Once on the baking sheet, give a generous seasoning of freshly ground salt and pepper. Then an additional sprinkle of garlic powder.

Lastly, the cheese. Buy the freshly shredded parmesan. This will crisp up must better than grated parmesan. Don’t skimp here! Cheese makes this dish. So pile the cheese onto each slice of zucchini.

Bake in the oven for about 10-12 minutes. Then crisp up the parmesan by broiling for one to two minutes. Watch closely to avoid it burning!

Roasted Parmesan Crusted Zucchini

Ingredients

  • 4 Cups Sliced Zucchini
  • 2 TBSP Olive Oil Extra Virgin
  • 2-4 TSP Garlic Powder to taste
  • 1 Cup Freshly Grated Parmesan Cheese
  • Salt and Pepper to taste

Instructions

  • Preheat the oven 400°F. Line a baking sheet with foil.
  • Slice zucchini into ¼ inch thick rounds. Typically one large to 2 medium sized zucchinis.
  • In a ziploc bag, toss sliced zucchini with olive oil and 2 teaspoons of garlic powder until coated.
  • On the baking sheet place zucchini in rows with edges close together but not touching.
  • Season tops of zucchini with freshly ground sea salt & pepper. Sprinkle an additional 1 to 2 tsp of garlic powder on top to preferred taste.
  • Top each zucchini slice with a generous amount of shredded parmesan.
  • Roast in oven for 10 minutes.
  • Then broil for about 2 minutes to crisp the parmesan, watching closely so it does not brown too much.
  • Serve and enjoy immediately.
