Banana bread is pretty fool-proof however, here are my tips for success! Ensure your banana is super ripe, fall apart kind of ripe. Then, really well smashed to ensure no lumps in your muffins and that the flavor is incorporated well throughout the muffin.
Equally important, do not overmix the batter. In order to prevent tough, unevenly baked, peaked muffins mix ingredients until just mixed through. This will help ensure a soft crumb to your banana muffins!
This recipe is so full of chocolate, there is a bit of chocolate in every bite. Best served while still warm, my kids proudly report these are napkin worthy! For picture perfect muffins, I add 3 to 4 additional chocolate chips into the top of the poured batter…it just looks pretty!
Chocolate Chip Banana Muffins
Ingredients
- 5½ TBSP Melted Butter
- 4 Medium Bananas Overripe and mashed
- ¼ Cup Brown Sugar
- ½ Cup Sugar
- 1 Egg
- 1½ TSP Vanilla Extract
- 1 TSP Baking Soda
- 1 Pinch Salt
- 1½ Cup All-Purpose Flour
- 1 Cup Semi-Sweet Chocolate Chips + extra to press into surface
Instructions
- Preheat oven to 400°F and prepare a 12 muffin pan with muffin liners or baking spray.
- In a medium bowl, combine flour, baking soda and salt. Whisk together and set aside.
- Melt butter and allow to cool slightly.
- Mash bananas and add into melted butter and continue to mix until creamy and no large chunks remain.
- Add brown sugar and sugar and mix until combined, scraping down the sides of the bowl occasionally.
- Add in vanilla and egg and mix until just combined. Continue to scrape down sides of bowl throughout mixing.
- In increments, add in the flour mixture and mix until just combined. Scrape down sides and continue until all the flour has been added. Do not overmix.
- Using a wooden spoon, stir in 1 cup of your favorite chocolate chips.
- Fill prepared muffin pan about ¾ full of batter, about ¼ cup of the batter into each muffin liner. Gently press 3 or 4 chocolate chips into the surface of the muffin.
- Bake at 400°F for 5 minutes, then reduce heat to 350°F and bake for an additional 15-17 minutes until a toothpick inserted into the center comes out mostly clean.
- Allow to cool and enjoy!
Eat well. Live fully. Bake often.
