Apples, spice and everything Fall!
Come September, I crave fall recipes that make my home cozy and full of the amazing scents. There is always an abundance of apples in my home, as we love the tradition of apple picking. I am always looking for a new, yet easy recipe to include apples in. These apple muffins are a fluffy, soft, and every bite has a bit of baked apple.
A healthy and wholesome breakfast for your family, this muffin recipe is full of fruit for an alternative to sugary cereal or pastries. Having a quick grab and go option for a healthy breakfast on busy school mornings is always needed!
Using applesauce in this recipe reduces the calories and fat content but really boosts the apple flavor! A touch of banana boosts the sweetness without too much added sugar. A delicious way to use up brown bananas!
Mixing muffins by hand is the best method. Using a wooden spoon will help prevent overmixing. Preparing this way helps to ensure fluffy and soft muffins.

Easy Apple Banana Muffins
Ingredients
- ¼ Cup Butter Melted
- 2 Over-ripe Bananas Smashed
- ¾ Cup Unsweetened Applesauce
- 1 Cup Brown Sugar
- 1 Egg
- 1 TSP Vanilla
- 1½ TSP Cinnamon
- 1½ Cups All-Purpose Flour
- ½ TSP Salt
- 1 TSP Baking Soda
- 1 Cup Apples Peeled and Diced
Instructions
- Preheat oven to 375°F. Line a muffin tin with liners and set aside.
- In a large bowl, combine flour, salt, baking soda and cinnamon. Whisk together and set aside.
- In another bowl, mix together melted butter and brown sugar. Add in apple sauce, vanilla and egg. Mix until combined.
- Add the smashed bananas and mix until well incorporated.
- Pour wet ingredients into the dry and mix until just combined.
- Add in the diced apples and incorporate well.
- Using a ¼ cup measuring cup, fill muffin liners about ¾ full.
- Bake 20-25 minutes until a toothpick inserted into the center comes out cleanly.
- Store in an airtight container on the counter for up to 5 days.
Eat well. Live fully. Bake often.
