My kids love hot cocoa, so incorporating the creamy, chocolatey flavor into a cookie was perfect! Of course the best part of hot chocolate is the marshmallows! Mini marshmallows are too messy and melt all over, ruining the shape and texture of the cookie. I have found the perfect solution, Marshmallow Bits!

Marshmallow Bits are dehydrated mini marshmallows, think the marshmallows you find in cereal. They hold their shape when baked, making them the best option for this recipe!

I like using mini chocolate chips in this recipe, it ensures you get a little chunk chocolate in every bite!

I recently converted to silicone baking mats and what a difference they make! Parchment paper is such a pain, having to cut the paper, tangle with it rolling up on your baking sheet, and replacing it between batches of cookies due to it browning! I wish I’d switch sooner.

Silicone baking mats prevent sticking, which is perfect for sticky cookies like Hot Cocoa Cookies. Marshmallows and chocolate do not stick. Baking mats prevent browning on the bottom, wipe clean easily, and I don’t even have to wash my cookie sheets after baking. No grease from the butter seeps through, so it will help preserve your cookie sheets longer. I always have replaced mine every few years due to rusting in the seams.

Cookie Secrets

Stir in your chocolate chips and marshmallow bits with a wooden spoon. The sturdiness of the spoon helps push the chips and marshmallows through the cookie dough without adding too much air to your dough.

When baking cookies that have additives such as chips or marshmallows, I like to smoosh a few of them onto the top of the cookie just prior to baking. This helps highlight what the cookies contains.

Ingredients

  • 1 Cup Butter Room Temperaturexer
  • ½ Cup Sugar
  • ½ Cup Light Brown Sugar
  • 3 Packets Hot Cocoa Mix
  • 3 TBSP Cocoa
  • 2 TSP Vanilla Extract
  • 2 Eggs
  • Cups All-Purpose Flour
  • ½ TSP Salt
  • 1 TSP Baking Soda
  • 1 Cup Chocolate Chips
  • 1 Cup Mallow Bits

Instructions

  • Preheat oven to 350°F. Prepare baking sheet with parchment paper or silicone baking mat.
  • In a large bowl, combine flour, salt, and baking powder and set aside.
  • In a stand mixer, cream together butter, sugar, and brown sugar. Mix until well combined, light and fluffy, about 1-2 minutes.
  • Add in hot cocoa mix and cocoa powder and mix on medium speed until well combined, scraping the sides of the bowl as needed.
  • Add in the eggs and vanilla extract and mix until well incorporated.
  • Mixing on low, add in the flour mixture a ½ cup at a time and mix until just combined. Do not over-mix.
  • Using a wooden spoon, gently combine the chocolate chips and Marshmallow bits until evenly mixed into the cookie dough.
  • Using a medium cookie scoop, drop about 1½ TBSP of cookie dough onto prepared cookie sheets. Space about 2 inches between cookies.
  • Bake about 9-11 minutes until cookies are set and edges appear slightly golden-brown.
  • Allow to rest for 2 minutes on the baking sheet prior to moving to a cooling rack to allow to cool completely.
  • Store in an airtight container for 5-7 days. Freeze extra to enjoy later!

Hot Cocoa cookies are absolutely delectable when fresh and warm from the oven. If there are any left, store in an airtight container for 5-7 days. These cookies freeze well, so you can pull out a quick treat at the last minute!
