Crepes need not be intimidating. With the right tools and recipe, crepes will be a regular in your household! This easy to follow recipe will give you all the tips and tricks you need for successful, easy crepes.
Prepping the batter is so easy! Throw all the ingredients into a blender, blend and done! I prefer to use an immersion blender. Add the ingredients into a large pitcher and blend well. Add the melted butter last to ensure it does not begin to solidify prior to blending in.
This batter is heavy with dutched cocoa, making it thick and rich! As a result, it is a bit thicker than typical crepe batter. It will not spread as easily, thus care must be taken to ensure it is no too thick for chewy crepes. Measure the batter for each crepe and spread as thinly as possible.
Using dark cocoa, such as Hershey’s Special Dark Dutched Cocoa will give the crepes deep, rich chocolate flavor. The texture of the crepes will be thicker, more pancake like. This results from the cocoa and sugar added. Your kitchen however will smell like freshly baked brownies.
The deep chocolate is perfectly complemented by cheesecake filling and strawberries. A decadent dessert for your Valentine or whenever you need to satisfy a chocolate craving!

Having the proper kitchen equipment is necessary to make easy chocolate crepes. A quality crepe pan or an electric crepe iron is essential! My preference is an electric crepe iron. With a lighter crepe batter, they are so easy to make! Dipping the iron into a the batter, a batch of fresh crepes is a breeze.
These chocolate crepes are a little trickier. The chocolate in the batter causes it to be heavier and thicker and therefore does not stick to the iron as well. Using a 1/3 cup, pour the batter onto the iron, swirl and allow to cook for about 20-30 seconds until no longer shiny. Using tongs, flip and cook and an additional 15-30 seconds.
Creating crepes with a crepe pan requires a little practice. The development of the technique of pouring the batter while swirling the batter can take a bit of trial and error. Having the pan nice a hot before adding your batter, hold the pan in one hand and pour the batter from the other, swirling while you pour to create a nice thin layer of batter. Invest in a good crepe pan and utensils for spreading and cooking crepes.
Many chocolate crepe recipes recommend a few tablespoons of cocoa. Blah! This chocolate crepe recipe is loaded with chocolate! As a result, they do not store and reheat as well. Not too much difficulty to eat these up, but to store and enjoy again, refrigerate these crepes, laid flat. Reheat in the microwave for about 10 seconds to soften. Fill with your favorite filling, reheat again for about 20-30 seconds. Then roll. They can be a little crumbley, so if all else fails….I stack one on top of another with plenty of filling between! You could skimp on the cocoa….but who would do that!
Fancy, decadent and oh-so chocolatey, these crepes are a delicious dessert that seems complex! A perfect dessert for a sweet end to your meal or to treat your Valentine.
