Cake Pop Truffles are the perfect treat for any kid party or family occasion. Smooth and sweet, these truffles taste just like the birthday cake pop from Starbucks®! These truffles are kid sweetness level approved!

Preparation of these truffles is incredibly easy! First, gather your ingredients.

Ingredients

  • Lorna Doone® Shortbread Cookies: These buttery shortbread cookies have a sweet, cake like flavor that crumble perfectly for these cake pop truffles.
  • Cream Cheese: Pulling all the yummy goodness together, I like my cream cheese to be at room temperature prior to mixing the ingredients together to ensure a well blended batter.
  • Almond Extract: A touch of almond to bring out all the flavors.
  • White Chocolate: The quality of your chocolate matters. My preference is Ghirardelli white chocolate®. The chocolate is so smooth and sweet. Either the classic white chips or the melting wafers work well for this recipe. While one bag will likely be enough, I typically like to have 2 bags on hand. First because it can be so easy to scald white chocolate but also making extra for ease of covering your truffles. I throw some almonds and raisins into the leftovers for a quick and easy bark candy!
  • Sprinkles: Sprinkles make the dessert pop! So many options allow you to customize these cake pop truffles to any holiday or occasion.

Prepare the batter!

In a food processor, pulverize the Lorna Doone® cookies into a fine crumb consistency. Next add in your cream cheese and pulse until smooth and well combined. I scrape the sides of the bowl a few times during the process to mix in all of the yummy cookies well. Lastly, add the almond extract. Pulse until well combined.

Prepare a cookie sheet with parchment paper and scoop tablespoon sized portions of the batter onto the prepared sheet. Roll these scoops into spheres and chill in the freezer for about 15 minutes.

While the truffles chill, prepare your white chocolate. In a double boiler (I use a heat safe bowl over a pot of simmering water), carefully melt the chocolate until smooth. Stir constantly while heating. Be cautious to not scald the chocolate, it will become rough and lumpy! Remove from heat once melted. I keep my chocolate over the heated water to ensure it does not begin to harden as I dip my truffles.

Remove truffles from the freezer and dip into white chocolate, rolling around until well coated. Place back on parchment paper. I typically dip about 4 truffles, then sprinkles on those to ensure the stick well. Continue until completed. I pop them back into the freezer for 5-10 minutes to allow the chocolate to set well.

Ingredients

  • 16 ounces Lorna Doone® Cookies
  • 8 ounces Cream Cheese Room Temperature
  • ¼ TSP Almond Extract
  • 16 ounces White Chocolate chips or melting wafers
  • Sprinkles

Instructions

  • In a food processor, pulverize the cookies into a crumb consistency.
  • Cut the cream cheese into six sections and add throughout the cookies. Pulse until well combined and smooth, scraping sides of bowl several times to ensure well mixed.
  • Add the almond extract and mix.
  • Prepare a cookie sheet with parchment paper. Scoop 1 TBSP portions of batter onto cookie sheet. Roll into spheres.
  • Place prepared truffles into the freezer to chill for 15 minutes.
  • While truffles chill, prepare chocolate. In a double boiler (or heat safe pan over a pan of simmering water), melt the chocolate. Stir constantly while heating to ensure the chocolate does not scald.
  • When melted and smooth, remove pan from heat and truffles from freezer.
  • Dip the truffles into the melted chocolate and roll to cover completely. Remove and place back on prepared cookie sheet.
  • After dipping about 4 truffles into the chocolate, sprinkle with sprinkles to ensure they adhere well to the top of the truffle.
  • Continue until completed.
  • Place truffles into the freezer for an additional 5 to 10 minutes to allow the chocolate to set.
  • Store in an airtight container in the refrigerator for up to 5 days. Freeze for a month if desired.

Kids love these sweet little truffles. Pop in your mouth goodness that are so festive, they will be the life of any party!
