Roasting Garlic
Roasting garlic is simple and easy, but truly will raise the taste level of this dish to new heights. Create a small “bowl” of aluminum foil to roast garlic in and place on a baking sheet. Preheat oven to 450 degrees. Peel 8 to 10 cloves of garlic, drizzle with olive oil and roast in oven for 15-20 minutes. Once soft and fragrant, smash cloves with a fork and set aside.
Choosing red potatoes versus white potatoes is a conscious decision. Red potatoes are less starchy than white potatoes and offer a sweeter flavor.

Ingredients
- 2 pounds Red Potatoes
- 1 TBSP Salt More to taste
- 1 TSP Garlic Powder
- 4 TBSP Butter
- 1/2 Cup Sour Cream
- 4 Green Onions
- 8-10 Roasted Garlic Cloves
Instructions
- Wash green onions and thinly slice.
- Wash and quarter the potatoes. Do not skin.
- Place in a pot and cover with water, about 1 inch above level of potatoes and heat to boil.
- Once potatoes begin to boil, add 1 tablespoon of salt. Reduce to heat to medium and boil about 20 minutes, until fork tender.
- Drain potatoes and return to pot.
- Add green onions, butter, sour cream, garlic powder and roasted garlic.
- Smash potatoes to desired smoothness. Salt and pepper to taste. Serve and enjoy.
Helpful Hints
Using a hand mixer takes away from the texture of these potatoes. It is recommended to use a hand tool to smash these potatoes. A tool like this is perfect. Smashing versus whipping these potatoes is a great texture for potatoes, take care not to smash so much that you lose the delicious hunks of garlic and potato.
