These shellfish are an excellent source of magnesium, potassium, vitamin B-12, selenium and Omega-3 oils.  Baked scallops are healthy and great tasting making them an excellent choice for dinner.

Selecting Your Scallops

Sea scallops are the best options for this recipe. Sea scallops can be up to three times the size of bay scallops. While bay scallops can be more tender, the meaty sweetness of the sea scallop is perfect for this baked recipe. Combined with the crunchy buttery topping, the sea scallop is a perfect pair.

You may wonder if you should buy fresh versus frozen. Both options will work well for this recipe. Individually flash frozen sea scallops can be fresher than those bought in the seafood department, which may have sat for a few days. Both should serve you well, but if you opt for frozen be certain to thaw them in the refrigerator overnight. Do not thaw at room temperature!

Ingredients

  • 1 Pound Sea Scallops
  • 1 TSP Garlic Powder
  • 1/2 Cup Butter
  • 1/4 Cup Dry White Wine
  • 1/2 Lemon Juiced
  • 25 Butter Round Crackers
  • 1 TBSP Fresh Chopped Parsley For Garnish
  • Salt & Pepper To Taste

Lemon Butter Sauce

  • 1/2 Lemon Juiced
  • 1/4 Cup Salted Butter
  • 1 TSP Chopped Garlic

Instructions

  • Preheat oven to 350 degrees.
  • Lightly grease an 8×8 baking pan with olive oil.
  • Rinse and drain scallops.
  • Crush the crackers and combine in a bowl with garlic powder and season with salt and fresh ground pepper to taste.
  • Melt butter. Mix melted butter, white wine, and lemon juice in a separate bowl.
  • Marinade the scallops in the butter, wine, and lemon mixture for 5 minutes.
  • After marinating, bread the scallops with the cracker mixture by pressing each side of the scallop into the breading.
  • Place the scallops in the baking dish in a single layer.
  • Bake in the oven for about 17-18 minutes, until the breading is lightly browned and the meat is opaque.
  • While baking, make the sauce by mixing melted butter, lemon, and chopped garlic.
  • Garnish with parsley.
  • Serve promptly. Pour sauce to taste on scallops after serving.
