Roasted Cauliflower with Lemon & Olives

This delicious tangy roasted cauliflower is an amazing recipe to get your whole family to enjoy cauliflower!

Ingredients

  • 1 Head Cauliflower
  • 1 Lemon
  • 12 Castelvetrano Olives
  • 2 TBSP Olive Oil Extra Virgin
  • Salt & Pepper To Taste

Instructions

  • Preheat the oven to 425F.
  • Line a baking sheet with foil.
  • Wash cauliflower and remove any leaves.
  • Chop cauliflower into florets, discarding any thick stalks.
  • Cut the lemon in half lengthwise, then slice one half into thin slices. Remove any seeds.
  • Juice the remaining half of lemon, mix with olive oil and set aside.
  • Coarsely chop the olives.
  • On the baking sheet, spread the cauliflower into a single layer and toss with olive oil and lemon juice mixture.
  • Season to taste with salt and pepper.
  • Spread the lemon slices and olives over the cauliflower and toss again.
  • Roast in the oven for 12 to 14 minutes, stir halfway through baking. Florets should begin to brown a golden color.

Don’t Be Afraid of Olives

You may not like olives, but don’t omit them from this recipe. Castelvetrano olives are not like their salty black counterparts. These olives are firm, with a buttery flavor and a crisp bite. They are not cured in vinegar like many olives, therefore not bitter. Even if you are an olive hater, you may be converted once you try Castelvetrano olives!

Helpful Hints

A few tips to make this recipe pop. Use Castelvetrano Olives that still have their pits. Although the are a bit more difficult to chop, the flavor is better and they tend to hold their firmness better. Using freshly ground sea salt and black pepper, offering better flavor and texture. Give the dish another few grinds of each after roasting for added flavor!
