Candy Makes it Better!

This recipe is versatile, as you can choose different candy bars and change up the flavor of the cookie! I recommend using a candy bar that is not too gooey or toffee, as this can run out of the cookie too much and make a mess! I love peanut butter cups or a milk chocolate nougat bar. These these pictured above were made with Milky Way® bars. Carmel can run a little, but often it can create these delicious crispy toffee on the edge of the cookie. Be bold and experiment!

Tips for Success

A fresh box of baking soda is a baker’s secret for perfect cookies. Replace your box of baking soda monthly to ensure your cookies plump up nicely while baking. No one likes a flat, runny chocolate cookie! Don’t worry, it is not wasteful…place your old box of baking soda in your fridge to keep it nice and fresh.

The temperature of your butter is important. This recipe requires the butter to be slightly softened to allow it to mix well with the brown sugar and not have lumps. Do not melt your butter in the microwave! Take your butter out of the fridge about one hour prior to planning to make the cookies. This should allow it to be warm enough to mix well, but not result in flat cookies.

This dough is a bit thick and chunky. Don’t fret, you did nothing wrong. This recipe requires less butter than traditional chocolate cookies. The dough will be a little chunkier and drier than you may have anticipated. A quality cookie scoop is an essential in all kitchens and this ensures the perfect shape and size for these cookies. I use a medium scoop for this recipe. Do not flatten your cookie dough prior to baking, for thick chewy cookies!

Ingredients

  • Cups All-Purpose Flour
  • ¾ Cup Butter 1½ Sticks at Room Temp
  • 1 TSP Baking Soda Heaping
  • 1 TSP Salt
  • 2 Cups Light Brown Sugar
  • TSP Vanilla Extract
  • 2 Large Eggs
  • 1 Cup Chopped Candy Bar
  • 1 Cup Semi-sweet Chocolate Chips

Instructions

  • Preheat oven to 350° and line a baking sheet with parchment paper.
  • Chop up your favorite candy bar into small pieces.
  • In a bowl, mix together flour, baking soda, and salt. Set aside.
  • In a stand mixture, on medium-high speed beat the butter and brown sugar together until light and fluffy.
  • Add the eggs and vanilla extract, beat until mixed.
  • Combined the flour mixture a bit at a time, mixing until just combined. The dough will be thick and chunky.
  • With a wooden spoon, mix in the chocolate chips and candy bar pieces until well combined. Do not overmix.
  • On the prepared baking sheet, use a cookie scoop or spoon and drop in large spoonfuls onto the parchment paper. Do not flatten.
  • Bake for 10 to 11 minutes until lightly golden brown. Allow to cool on baking sheet for 1 minute before moving to a cooling rack. Enjoy as soon as cool enough to eat!
  • Store in an airtight container.

These cookies are best enjoyed within 3 days. No one loves a stale cookie. Typically leftover cookies are never a problem in my house, however this recipe does make about 40 cookies. I love sharing cookies with my neighbors…however these cookies will freeze well to save some for a day when you need something sweet!
