Buckeye balls were one of my absolute favorite cookies as a kid! Rich peanut butter and coated with chocolate, what is not to love! My Peanut Butter Buckeye Pie is a sophisticated version of buckeye balls. If you love peanut butter, this is the dessert for you!

Peanut Butter & Chocolate

I don’t honestly think there are two ingredients more made for each other than peanut butter and chocolate. I am a dessert lover, but a small piece of this pie is truly satisfying, so rich and decadent as much as I want to eat more, my sweet tooth is satisfied.

The flour to other ingredient ratio makes this almost like a torte. The chocolate brownie base is incredible….soft and thick with chocolate. A good cup of coffee or glass of milk is a perfect companion for this dessert.

Peanut Butter is dreamy…salty and sweet is a perfect combination. The peanut butter layer is creamy, peanut buttery, and balances out the sweetness of the chocolate.

Rich chocolate ganache is the crown on top. Soft and rich, you will lick your fork clean for certain!

Peanut Butter Buckeye Pie

Ingredients

Chocolate Brownie Layer

  • 10 TBSP Butter Melted
  • Cups Sugar
  • ¾ Cup Unsweetened Cocoa Powder Plus additional 2 TBSP
  • 1 TSP Vanilla
  • 2 Eggs
  • ½ Cup Flour

Peanut Butter Layer

  • 1 Cup Creamy Peanut Butter
  • ¼ Cup Butter Softened
  • ¼ TSP Vanilla Extract
  • 1 Cup Confectioners Sugar

Chocolate Ganache

  • 1 Cup Heavy Whipping Cream
  • 2 Cups Semi-Sweet Chocolate Chips

Instructions

Chocolate Brownie Layer

  • Preheat oven to 325°F. Grease a 9 inch round cake pan. Line the cake pan with parchment paper. Grease again.
  • Beat eggs and sugar in a large bowl.
  • Stir in flour, melted butter, cocoa, and vanilla extract until smooth. Pour into prepared pan.
  • Bake for 25 minutes, until a toothpick inserted into the center comes out cleanly.
  • Cool on a wire rack for 5 minutes. Run knife around the edge of cake and allow to cool for an additional 10 minutes.
  • Invert onto a serving platter. Remove pan and parchment paper. Allow to cool completely.

Peanut Butter Layer

  • Beat peanut butter, butter, vanilla extract, in a mixer until well combined.
  • Gradually add confectioner's sugar and mix until completely incorporated and smooth.
  • Spread peanut butter mixture in an even layer over chocolate brownie layer. Spread right to the edges. Refrigerate for 30 minutes.

Chocolate Ganache Layer

  • Heat the cream in a small saucepan to boiling. Remove from heat.
  • Add chocolate morsels and allow to stand for 5 minutes.
  • Stir and refrigerate for 10 minutes until slightly thickened.
  • Pour over ganache over top of pie and spread over the sides.
  • Refrigerate until completely set. Serve and enjoy!
  • Store in an airtight container in the fridge for up to 7 days.
