This easy recipe can be whipped up in a matter of five minutes, pop it in the freezer for a couple of hours to firm up, and you have a delicious treat in no time. I am not gonna lie…I serve it right out of the food processor when I have a hankering for a cold, frozen treat!
Simple & Healthy Ingredients
- Frozen Pineapple: I use frozen bagged pineapple for this recipe and it works perfectly. Go for quality…if you can find DOLE® Tropical Gold® that is the brand I prefer.
- Coconut Milk: Canned, full cream coconut milk adds a tropical flavor and richness to this sorbet.
- A touch of sweetness: Adding just a light sweetener brings forward all of the tropical flavors. I like using maple syrup, honey or agave. Adjust the sweetness to your liking by starting with 3-4 TBSP, have a taste and then add more as needed.
- Lemon: Adding a touch of freshly squeezed lemon juice brightens up all of the flavors.
I use a Ninja Professional Blender system with a food processor attachment to create my sorbet. If you don’t have a food processor, any quality smoothie blender should work fine.
Be certain to stop blending, scrape the sides to ensure all of the chunks of fruit get into the mix. If using honey, this has a tendency to stick to the sides as well. This is also the perfect opportunity to steal a taste….it is necessary for a quality outcome!

Making sorbet is so incredibly easy! No special ice cream churner needed! Pineapple sorbet is a little trickier than other fruit sorbets, due to the fibrous nature of pineapple. It tends to require more blending time. Additionally, as it hold more juice in the fruit it can be a little harder to scoop out once frozen. Just let it sit for a few minutes prior to scooping!
Pineapple Coconut Sorbet
Ingredients
- 4 Cups Frozen Pineapple
- 13.5 Ounce Coconut Milk
- 4 TBSP Maple Syrup Alternatives: Honey or Agave
- 1 TBSP Fresh Lemon Juice
Instructions
- Add all ingredients into a food processor or smoothie blender. Blend until smooth, pausing to scrape sides to ensure all ingredients are well mixed and smoothed.
- Transfer sorbet into a freezer safe container and freeze for at least 2 hours.
- Enjoy!
