My lobster mac and cheese combines two types of cheese, baked to a golden brown and peppered with rich bites of lobster meat. It is a spectacular combination of flavors that everyone will rave over! Mac and cheese is delicious, but the flavor factor is elevated to new levels with the buttery meat of lobster. This recipe has become a go to for all family gatherings at my home.

Rich and Buttery Lobster!

I love lobster anything! This dish combines my two favorite foods, lobster and yummy mac and cheese. The lobster in this recipe will allow this dish to be the main course, or a companion to a fish dish.

I like to chop the lobster meat into bite size pieces so that there is a delicious bite of lobster in every forkful! Obviously lobster makes this dish extraordinary, however it is not cheap. Another option would be to use Langostino Lobster, which offers very similar flavor but is more affordable.

Gruyère Cheese

I highly recommend making this recipe with Gruyère cheese. This cheese is a marvelous companion to lobster- with a rich and creamy flavor, and mild nutty undertones. Gruyère melts smoothly to create a rich and unique flavor for this mac and cheese. Choosing a companion cheese is equally important. I like to use Colby Jack with this dish, as it offers a mild and lightly sweet flavor. Using a cheddar would be too sharp a flavor and overpower the Gruyère. Make this recipe your own by trying Muenster or Monterey Jack. Although Gruyère is a little pricier a cheese, it is well worth it for this recipe!

Lobster Mac and Cheese

This rich and creamy lobster mac and cheese recipe is the perfect comfort food. Warm and delicious with rich bites of lobster!

Ingredients

  • 1 Pound Elbow Macaroni or Cavatappi
  • 7 TBSP Butter Separated
  • 6 TBSP All Purpose Flour
  • 4 Cups Whole Milk
  • 2 Cups Gruyère Cheese Shredded
  • 2 Cups Colby Jack Shredded
  • 1 Small Yellow Onion Finely Chopped
  • 2 Cloves Garlic Finely Chopped
  • 1 Pound Lobster or Langostino Meat Cut into bite sized pieces
  • 1/2 TSP Salt
  • 1/2 TSP Black Pepper

Instructions

  • In a large stock pot, bring salted water to a boil. Once boiling, add pasta and cook to just al dente.
  • Preheat oven to 350 degrees
  • While pasta cooks, melt 6 tablespoons of butter in a skillet.
  • Add flour to butter and stir over medium heat for about 1 to 2 minutes, until slightly browned.
  • Add the milk and whisk to remove any lumps. Add the salt and pepper.
  • Cook mixture for 5-6 minutes over medium-high heat until sauce thickens and begins bubbling.
  • While sauce cooks, in a small skillet melt remaining 1 tablespoon of butter. Saute onions and garlic until soft and fragrant.
  • Add lobster meat to onions and garlic to combine flavors and cook for 2-3 minutes. Too long and you will have tough meat!
  • Once sauce has thickened, mix in cheese, reserving about 1/2 cup of each cheese for topping. Whisk until melted and smooth. Remove from heat.
  • Combine sauce, drained pasta and lobster meat together and mix until coated.
  • Move pasta into a greased 9×13 baking dish and top with remaining cheese.
  • Bake at 350 degrees for 20-25 minutes.
  • Place under broiler for 2 minutes to make a golden top. Watch closely!

If you prefer a creamier cheese sauce, bake immediately for 10 minutes and then broil for 2 minutes to brown the cheese on top. I prefer cheese on the top of my mac and cheese, over bread crumbs. I personally don’t like the crumb texture in my creamy goodness.

Preparing lots of food for a party can require strong logistics to ensure every dish is hot and ready when you sit to eat. Aside from the deliciousness of my lobster mac and cheese, I also love that I can prepare this dish the night before and refrigerate. To prepare from cold, place the cold dish straight from the fridge into a cold oven. Turn the oven on to 350 degrees and bring to temperature. Bake for 30 minutes.

My lobster mac and cheese is delicious, creamy, and rich! Baked to perfection, with golden brown cheese topping and rich bites of lobster in every bite.
